It all started in 1990 in a small country farmhouse in the hinterland of Byron Bay. With an old family recipe in hand, the founders started experimenting with local ingredients like macadamia nuts to bake cookies for community markets under the name ‘Pickles, Pies & Petticoats’. Soon enough locals started referring to them as “the cookies from Byron”… and so the Byron Bay Cookie Company was born!     Service was really speedy. I also liked that the deliverer sent a photo of the safe spot where the parcel was left. Although it says that a photo should be left this is the first time it has happened,
