For this installment, the maker behind Byron Bay Cacao Richard Tuohy who reveals his path to falling in love with the magic of chocolate, crafting new flavours for his diehard fans and keeping himself happy & healthy whilst working in the sweet biz.

What was it that inspired you to start your business?
The endless possibilities with chocolate and confections.
Was there a particular time in your life that you can recall that led you to create Byron Bay Cacao?
Looking back I can see that every country, workplace, chef, and environment I was immersed in left an impression on me and my work.
What was the biggest obstacle that you faced when starting your business?
Selling stuff, I don't enjoy peddling my wares.
What do you enjoy most about creating your business?
Getting elbow deep in chocolate, creating new flavours, and playing with different techniques.
What honest advice do you have for someone starting or thinking about starting a business?
Research, and be prepared to fail.
What’s next for you and your business?
New summer bonbon flavours for launch in November.
GETTING TO KNOW RICHARD
Favourite all-time food?
Chocolate, a simple ganache can be a great addition to a dish or stand-alone. Just boil some cream, pour it over the chocolate and give it a really good mix. 50/50 cream to dark chocolate. Let it get cold and it's good to go or whip it for a great mousse.
Can chocolate be healthy?
Chocolate, is healthy, it can be refined sugar-free, dairy-free, and gluten-free.
Morning routine consists of?
Yoga, food, coffee, or if all the stars align I might get a surf in.
Favourite way to unwind at the end of the day?
Rolling around on the floor with my kids.

Besides living and sharing a healthy lifestyle with your business … what else are you passionate about?
Family, food, and sports like surfing, kite surfing, mountain biking. We just love getting out into the environment. We’re all so lucky to live in such a beautiful place.
