The Byron Beef Jerky company is another fantastic brand to be born in our hometown. They have dedicated the last twenty years to developing the most delicious savoury jerky and biltong recipes for everyone to enjoy.
They began on a humble farm in the rolling hinterlands that surround Byron as established farmers of locally grown produce, including salad mixes and fresh herbs. They certainly have a vast knowledge of the regional land, which was a fantastic base to propel them into a new journey. Understanding the importance of nurturing the land and pastures is a big part of their ethos; being in control of the livelihood of their free-range cattle is incredibly important when it comes to the quality of their final product. Keeping natural is critical, so they refuse to use additives or toxic nasties in their production line. Everything is considered, from crop spraying to seasoning, and all processes go through constant control to ensure their environmental footprint is as friendly as possible. We love supporting brands that take a strong stance on reviewing and adapting every part of their manufacturing process. Byron Beef Jerky is made on a thermally efficient premise that uses solar energy as well as utilising 100% recyclable cardboard packaging; these parts of running a business always work in progress, and accountability goes a long way.
So what is the difference between jerky and biltong, we hear you ask? Well, they are both forms of dried meat; jerky is created from leaner cuts, cooked with heat for a chewier, steak-like texture, whereas biltong is made with cuts that have a higher fat content; it is air dried, so the final product is a lot softer. Biltong is a traditional South African snack, and these ancient recipes have been carried down from co-owner Graham Moule’s childhood in South Africa, where he learned the techniques from his grandfather. Byron Beef Jerky has created an environment that mimics the hot, dry plains of the Karoo for an authentic process, therefore, an authentic product. Both jerky and biltong are very high in protein and are nutritious, not to mention incredibly tasty snacks. Each flavour and variation is created with marinades, spices and rubs that are low in sugar and free from preservatives - many of their products are also suitable for those with gluten intolerances or following paleo diets. They are a revolution in the world of meat treats that makes for a great accompaniment to cheese boards, afternoon beers, or something healthy on the go.
