They are a family-run business confidently led by Brian and Helen Restall; with their vast knowledge of spirits from their worldwide travels, they were inspired to establish their own small-batch distillery. After years of sipping on local versions of well-known liquors, ranging from dark to light, they found a middle ground in what eventually grew into the Lord Byron Distillery. Brian’s previous experience working with renewal energy sources in the local sugar mills gave a niche insight into the bi-product of molasses. This was typically reused as a form of cattle feed, but this seemed like a wasted opportunity to Brian. The high-grade nature of the molasses meant it was fit for human consumption and could be the base of some seriously tasty spirits. Alongside the guidance of Tasmanian liquor legend Bill Lark, who has been an incredible force within the industry, Lord Byron Distillery began.
Every part of their distilling process is carefully monitored; Brian and Helen believe the liquor industry should be as transparent as the world of food. Customers should know how everything is made, where it is made and what it is made of. With this, everyone can make informed decisions on what they consume and encourage the support of local, eco-friendly businesses. They source both locally and seasonally and handcraft everything right here in Byron Bay. All of their drinks start with a combination of rainwater and pure spring water straight from the ground of the family farm, which is then mixed with the rich, fruity molasses and live-giving fermented botanicals for a more complex tasting finish. The distillery and farm are powered by 100% renewable energy, and they practice a zero-waste method by turning any bi-products back into fertilisers for the local land.
