Located in the stunning Byron Bay Hinterlands, Wattle Tree Creek is an Australian native food company that creates a wide range of delicious relishes with local indigenous ingredients. By using predominantly fresh produce from their farm, they truly live by the farm-to-table practice, keeping things close to home and having complete control over their final products, which include a selection of bush-based jams, chutneys, pickles, different kinds of butter and zesty marmalades.

The farm located in Dunoon is a beautiful expanse of flowing fruit fields and macadamia trees. This extensive bush orchard fruits and blossoms some of our favourite native ingredients, including lemon myrtle, Davidson plums, finger limes, raspberries and rosellas, to name a few. The variety of flavours inspires them, with many different aromas and combinations harvested each year. Owner and creator of Wattle Tree Creek, Claire began her company journey by exploring local markets and discovering the delightful diversity of bush tucker tastes, from fruity to tangy, to spicy and fresh. This inspired her to work with old family recipes whilst introducing some of these new components; this is when she began making some seriously incredible and unique tasting preserves. Over the course of ten years, Claire’s passion gradually took off from jarring and bottling her conjunctions for family and friends to manufacturing in bulk to satisfy her ever-growing client base (Byron Bay Gifts being one of them!)

Not only does Wattle Tree Creek formulate delicious recipes and pantry staples, but by using these wonderful indigenous flavours, the health benefits are a real point of difference. Fruits like Kakuda Plums and native finger limes have a very high concentration of Vitamin C. It is common for many sauces and condiments to come with an unwelcome list of preservatives, colourings and fillers, but that was never an option for Claire and her team. Her process ensures that none of these nasties gets anywhere near her produce, zero of her crops are sprayed, and she uses only natural measures to conserve the shelf life without altering the flavour or integrity of her sustainable business. It is no wonder that Wattle Tree Creek has received notable recognition across the country; they have won multiple Fine Food Awards in Sydney, Hobart and Melbourne. We are only getting more excited about their future, with Claire excited to plant a range of different fruits and nuts to begin expanding the capacity for both sweet and savory. It is hard to pick a favourite, but we love having a jar of the Sea Celery Mustard Pickle or the Bush Fire Capsicum Chili Jam makes the perfect addition to any cheese board.
